First Post... Thick Zucchini Pasta With Creamy, Garlic-y Avocado Sauce

Hello all! I am a high school student living in NYC. After adopting a vegan diet about a year ago, I learned about the 80/10/10 diet a few months ago and have been experimenting with it. Obviously it is not always maintanable, so I will occasionally eat high carb cooked foods--steamed vegetables, sweet potatoes, potatoes, and quinoa, I try very hard to stick to fresh, raw fruits and vegetables the majority of the time.
I went on a little trip today to the Union Square Farmers Market, which was awesome. I got awesome fresh, organic greens, broccoli rabe, apples, a bunch of fresh cilatro, a mint plant (so excited about it!), and some zucchinis. I have really been craving raw zucchini pasta after ordering a spiralizer about a week ago from rawfullyorganic.com. It hasn't come yet, so I had to resort to making my own thick zucchini pasta-like strips instead.
So I'm sorry these pictures suck... you can thank photobooth for that. But don't let these crappy photos deter you from making this recipe. It's so good, and can definitely fit into an 80/10/10 raw vegan diet. It is a really simple recipe, open to adaptation. You can use whatever you have on hand to adapt it. Enjoy!
Here it is:


Thick Zucchini Pasta With Creamy, Garlic-y Avocado Sauce
Serves 1

Ingredients:
a few handfuls fresh greens of choice
2 1/2-3 zucchinis
1/2 an avocado
1 clove garlic
squeeze fresh lemon juice
Fresh mint (optional)

Steps:
1: cut each zucchini in half, and then slice into strips of your desired thickness. Place over a platter with a a few handfuls of greens of your choice.
2: Blend half avocado, 1/2-1 zucchini, clove of garlic, and a couple of squeezes of lemon juice. Add a little bit if water for a thinner sauce. Pour as much as you want  over your pasta (you may end up with leftover sauce). I topped mine with a few chopped leaves of fresh mint.

A few notes: You can add whatever vegetables you have on hand for a bit more complexity. I added a handful of organic radish shoots for a bit of a spicy bite. Delicious! Also, I ended up mixing everything together in a larger bowl to incorporate the sauce.
